If you apprecaite great quality beef, and believe in utilising all cuts in a beast (no waste head to tail cooking) then we have what you want! Just drop us a line. Happy to answer all of your questions. We have 'take away, ready to go' pre specified yearling quarters ready and waiting in our freezers (just ask for the spec sheet), or you can custom specify your own quarter and choose how you would like all 12 cuts processed, (there is usually 3 or 4 options for every cut).
So what's so different about our beef?
Fortune Beef is 'Sprout Fed' Finished Yearling Beef = Tenderness. Butchers will rarley sell Yearling beef and their lack of consistant meat quality rarely gives the consumer confidence. Fortune Beef is not Lot Fed, nor pumped with water or given Hormone Growth Promotants, rather it's hand fed daily with Grain & Barley Sprouts whilst grazing on grass free range. Fortune Beef has been finished on grain in the paddock for a minimum of 100 days.We are family owned, our beef is locally grown on the Sunshine Coast, & locally processed. The product hangs for a 2 week period.We prefer to fatten the softer, naturally marbeling cattle breeds like Murray Grey, Angus & Wagyu.
What is marbling? Is this unhealthy?
To quote some useful information from the Victorian Blackmore Wagyu Beef Breeders;
"While past public campaigns have educated the Australian public that fat in beef is unhealthy, the marbling in Wagyu beef has a different story altogether".
Characteristically, Wagyu beef is highly marbled. This means that the muscle is finely interspersed with monounsaturated fat. This marbling gives the beef its "melt in the mouth" moisture and tenderness
"The heavy marbling in Wagyu beef, which is described as 'an intra-muscular deposit of energy in a lace-like lattice', has been found to contain MONOSATURATED fats. Research has shown that the monounsaturated fats in Wagyu can assist in reducing cholesterol levels in the body".
"The marbling is also the reason for the unique flavour, texture and moisture of Wagyu beef. Some may describe the beef as a smooth caramel / buttery flavour that is intensely sweet and delicate.The monounsaturated fatty acids have a very low melting point (less than 7 degrees Celsius), which means that the beef literally "melts in your mouth".When cooked, the marbling is absorbed into the muscle and gives the meat its tenderness and flavour. The marbling reappears once the meet is cooled".

"Due to my busy life, up until I purchased your meat, I would go to the butchers and purchase enough meat to last us for a month. "Hello Mieke, You’ve done it again. The half beast that Alitia and I shared is again fantastic. My son, who is a big meat eater and loves his steak, is literally drooling at the mouth. It is so tender. I love the silverside and sausages. Being abe to order how we want the cuts and what size packaging makes it very easy to handle. It is also great that you drop off our purchases on time to us. Naturally my dogs love the bones and offal – they also get a lot of mince as I cook for them 4 nights a week. I do have 5 Labradors, who admitedly eat anything, but what I am happy about is that they are getting really good quality meat at a very resonable price. I know that when beasts are fed with hormones and other drugs, the drugs tend to build up in the liver/kidneys and offal, so when pets eat those parts they are in turn getting the ‘nasties’. With your meat, they aren’t getting any of those ‘nasties’. I know that Alitia and I will definetly continue to purchase our meat through you".

“Finishing our yearlings on grain whilst they range free to graze in the paddock is a HEALTHY & HAPPY existence for the animal and ensures a TASTY alternative for you. Grass fed beef tends to produce a cream to yellow colored fat which provides the meat with a exceptional TASTE, whilst the grain aids in TENDERNESS by enabling us to fatten 2 tooth yearlings (animals under 2 years of age that still have there MILK teeth) on our coastal pastures.
Every one of our yearlings gets a biscuit of Sprouted Barley Grass each day along with their grain ration this compliments nicely with the grass they eat in the paddock. They LOVE their BARLEY SPROUTS too!
Why Feed Barley Sprouts?
Sprouts are a LIVING FOOD and a rich source of antioxidants. According to Herb & Sprout Guru Isabelle Shiphard 2005 “Antioxidants play an important role in assisting to protect the body from damage by free radicals. Sprouts help to “alkalise” the body and neutralise acidic wastes, thus assisting the body to heal itself and develop a stronger immune system.
Just as most plants grow well in neutral pH soils, so too can animals be more productive if given alkaline feeds. It is believed that in an acid state, body cells cannot adequately take in nutrients and oxygen, and they cannot effectively expel toxins. An overly acid state reduces the amount of oxygen and nutrients that the cells can receive. When a cell is oxygen deprived, various types of serious health problems may be created. Healthy cells are alkaline. An alkaline body is a clean system that is able to play a vital role in maintaining natural immunity and optimum health. Feeds are classified as “acid” or “alkaline” according to the chemical nature of the ash residue that remains following digestive processes. “Ash” relates to the mineral content of feed.
Sprouted Barley Grass takes 6 days to sprout in a hydroponic climate controlled room. This unit produces 250kg of sprouted Barley fodder per day.
Handling cattle daily ensures they remain quiet, easy to manage and STRESS FREE. We hand feed our yearlings every day. They eagerly await the 72 foot food train we tow to them behind the quad.

Fortune Beef is finished on the Sunshine Coast, on the banks of the North Arm of the Maroochy River, NORTH ARM.
This is also home to our wholesale production nursery facility, Fortune-8 Nurseries.

Our fascination with cattle and our horticultural background means that sprouting barley in a fodder factory and feeding it to the cattle ties our two passions together nicely! We have a young family and it is a great place for the kids to grow up, get outside and run around on the farm”.
How do you like your meat?
Sliced Thick or thin? Corned? Cryovaced? Crumbed? Sausages? Fill out our Beef Cuts Specs Sheet. We have a wonderful 4th generation butcher that divides, cuts, labels, and packages your meat for you. Your beef is also SNAP FROZEN by the butcher so you don’t have to worry about restacking your meat to avoid any meat hot spots in your freezer.
The only work you will have to do is walk to the freezer and decide which cut you are having for dinner tonight!
Do you employ staff? Need a Business Tax invoice?
Many of our customers have small businesses and buy bulk meat for their monthly staff BBQ's and functions. There is no GST on cut up meat.

Turn around Time for a Custom Cut up Beef order?
Once your Beast Specification Cut Up Sheet and deposit has been received allow 14 days to receive your meat from a Sunday. Your beast will hang for 12 days. Typically the longer it hangs the better the meat quality. NB: Saturday p.m. cut off for the weeks orders. (We muster Sunday mornings).
We LOVE to support our local community by doing business locally. Our meat is processed by a local abattoir, shipped and then cut up to your specs, packaged, labeled and snap frozen for you by a local butcher.
NB: We also keep 'take away' ready to go quarters in the freezer, please contact us for each quarters specs if you do not want a custom cut up.
Freezer Room? Portion Sizes?
As a guide our average size Yearling dresses at approximately 200kg . A QUARTER (25%) of this beast Averages at 50kg +or - this packs into 2 large size grocery or Banana boxes.
All beef is pre SNAP FROZEN & cut up stakes are layered with plastic in shatter packs so each stake can be individually removed as you require it from your freezer rather than defrosting each steak pack.

So what determines meat quality?
Your beef eating experience is characterised by your perceptions of tenderness, juciness, flavour and overall liking.
The tenderness and flavour of your beef is influenced by a variety of factors.They are:
Age, Breed, Nutrition, Environment, Quality Assurance Systems on and off-the farm, Hanging Time, Cooking Length & Cooking Method.
We control as many of these factors as we possibly can here. We do this by grain & paddock feeding the youngest, naturally marbling yearlings for the longest possible period of time in a stress free environment.
'The transit time to the local abboitoire is 10 minutes, the animals are 'STUNNED' and the hanging duration is 2 weeks.
The cooking is the fun part that you get to control!
